TBF I have never heard this, even after a decade as an engineer at Boeing. “Head-up display” may be common among human factors engineers, where the focus is on cockpit ergonomics, and maybe it was the original use at the Pentagon, but I think both should be considered correct because even in aerospace you’ll hear “heads-up” more often.
