My quick and dirty go-to meal for when I’m too tired to cook or just didn’t have time to prepare anything is Hot Dogs and Rice:
Chop up three hot dogs, ~¼ inch per slice, and set aside. Dice a small yellow onion; melt a tablespoon of butter in a pot over medium heat and throw in the onion, sauteeing until translucent. Throw in a cup of rice and allow the rice to toast a bit. Once toasted, add 2.5 cups of chicken broth (I use Better than Bouillon, it slaps) and let it reach a boil; meanwhile, gather ¼ tsp turmeric, ¼ tsp oregano, ¼ tsp basil, ¼ tsp rosemary, ¼ tsp garlic powder, and ¼ tsp onion powder, and dump that mixture into your pot and stir a little. Once you’ve got some boilage, add your chopped up hot dogs and ½ cup frozen veggies, then put the lid on and let it simmer for 20 minutes, after which you can remove from heat and let stand (lid on) for another 10 minutes. Then grab a fork and eat! It’s quick, easy, and dirt cheap, while still being pretty yummy.
