Because employees from Bayer founded the club 120 years ago. It’s been the name forever and wasn’t bought and used as an advertising vehicle like your example of Leipzig. It’s still owned by the same company, and is the only exception to the German 50+1 ownership rule as well.
There was 2 Red Bull teams and it is not allowed to have both named Red Bull (Salzburg and Leipzig).
