Porsche Classic makes a specific oil for your car. That’s probably your best bet unless you want to read endless oil threads and discussions that culminate in nothing.
Honestly, just change it often enough and don’t stress about it. Life is too short to spend hours of your life researching oil.
If you ‘give it a good bath’ go for a drive afterwards. You need to get any trapped water to blow and shake out. A little dirt sitting will not cause damage, water sitting might.
As far as humidity goes, as long as there is no condensation your fine. It’s usually temperature swings that cause those.
For you does winter = snow? Or just cooler weather? I’m not sure I would care about N-rating to be honest, certainly not in snow, but to each there own and there is a lot of opinion/threads about this.
I would also give consideration to 18" sizes to see if it increases you pool of choices.
