  • Ngl, lemon meringue pie from scratch is a demanding recipe. A lot of kitchen skills involved, even with the crust.

    But back ages ago, I used to say I was not a baker, that the only thing I could bake was biscuits (the US kind). Turns out I was wrong. I don’t bake as much as I used to, but I can still turn out damn fine baked goods.

    Just in case you change your mind, I’m copying in the recipe. And, if you decide to take a crack at it, or any other baking, don’t hesitate to reach out.

    Lemon Meringue Pie: Reloaded

    Dessert, Pies Prep Time: 35 min | Cook Time: 4 hr 50 min | Servings: Yield: 6 to 8 servings

    Ingredients:

    Crust: 110 grams (8 tablespoons) unsalted butter, sliced into very thin pats 150 grams all-purpose flour 1/2 teaspoon kosher salt 1/4 cup ice water Lemon Filling: 70 grams egg yolk (4 large) (reserve whites for meringue) 280 grams sugar (1 1/3 cups) 50 grams cornstarch (1/3 cup) 1 1/2 cups water 1/4 teaspoon kosher salt 45 grams unsalted butter (3 tablespoons) 1/2 cup lemon juice 1 tablespoon finely grated lemon zest Meringue Topping: 165 grams egg white (1 egg white plus the 4 reserved from the filling) 150 grams sugar (3/4 cup) 1/2 teaspoon cream of tartar 1/4 teaspoon kosher salt Hardware: Food processor 2 metal pie pans Rolling pin Cooling rack

    Directions:

    Crust: Place butter in the freezer for 15 minutes along with two identical 9-inch metal pie pans. Combine flour and salt in the bowl of a food processor and pulse 2 to 4 times then add butter and pulse 8 to 10 times, until texture looks mealy and no large lumps of butter remain (see Cook’s Note). Pour in water and pulse 5 times. (At this point the mixture should hold together when squeezed.) Turn dough out onto a sheet of plastic wrap and draw the plastic up around it, squeezing and pressing the dough into a ball. Flatten into an inch thick disk and refrigerate for 30 minutes. Remove dough from refrigerator, unwrap and place on a lightly floured piece of parchment paper. Dust the top of the disk with a small amount of flour and top with a second sheet of parchment. Roll dough out into a round 1/8-inch thick. If the dough is too firm to roll at first, give it 5 minutes to soften, but not much more or the fat may start to melt. Remove pie pans from the freezer and invert one. Lay the dough, sandwiched between parchment sheets, over the inverted pan and peel back the top sheet of parchment. Place the second pan over the inverted pan and press down gently to shape the dough. Flip both pans over, lift the top one out, peel away the other piece of parchment, set the pie pan back into the other. Flip the pan/dough sandwich over and trim away excess dough. Freeze the dough sandwiched between the pans for at least 30 minutes. Meanwhile, position a rack in the center of the oven with a second just beneath it. Heat oven to 300 degrees F. Place inverted pie pans in oven directly on the top rack and place a sheet on the lower rack to catch any butter that might render out. Bake for 1 hour then crank the oven to 375 degrees F, and bake until browned, about 15 minutes more. Remove from oven and cool for 20 minutes with both pie pans in place. Then invert, remove the top pie pan and cool completely while you make the filling. Filling: Whisk egg yolks until light in color in a medium nonreactive bowl and set aside. Whisk sugar, cornstarch, water and salt in a medium saucepan and bring to a simmer over medium heat. Whisk in butter and continue whisking until just boiling (mixture will become thick and glossy and almost clear). Remove from heat and temper the yolks by slowly adding the hot starch mixture to them a whisk full at a time, stirring constantly until one-third of the starch mixture has been worked into the eggs, then return that mixture to the saucepan. Stir in the lemon juice and zest, reduce heat to medium-low and whisk constantly until mixture returns to a boil. Cook for one full minute more then pour into the pie shell. Cool at room temperature an hour and a half before topping with meringue. Meringue Topping: Whisk together egg whites, sugar, cream of tartar and salt in the bowl of a stand mixer then place the bowl over a pot of simmer water to improvise a double boiler. Whisk constantly until mixture reaches 165 degrees F. Return the bowl to the stand mixer fitted with the whisk attachment and beat on high until soft peaks form, about 1 minute. Reduce speed to medium and continue to beat until stiff peaks form, about 5 minutes more. Top pie with meringue, making sure to anchor the meringue to the edges of the crust. Torch to brown if desired, and who doesn’t desire torching a meringue?





  • Should actually be pretty easy. All the citrus juices tend to make a decent curd using the same process. Might have to adjust the corn starch (or other thickener) what with varying water content, but that’s going to be the case from one batch of lemons to another.

    Usually, the meringue is harder than the curd.

    I use This recipe for lemon meringue, but I’ve used lime and grapefruit in the same recipe before, and it came out the same consistency. So I imagine tangerine, or any citrus would too




  • Originally, it was all about the awareness of systemic injustice, particularly surrounding African Americans.

    Eventually, it shifted to an awareness of systemic flaws in general, and social imbalances and injustice, outside of purely governmental bounds.

    Now? It’s turned into a clear and easy way to tell someone is a moron because nobody else uses it any more, so it’s always someone saying that woke is bad without eve. Understanding what it is



  • I’ve argued the merits of miracle whip for over a decade at least. I despise the food snobbery underpinning its hate anyway, and the fact that it has its culinary place just adds spice to my disgust.

    But better? Nah, just a different product with different use cases.

    It’s like saying oranges are better than apples. Yeah, someone may like one better than the other, but they’re totally different experiences and are used differently as ingredients. MW may be closer to mayo than apples and oranges, but that’s a matter of degree, not essense.

    I tend to favor MW on most sandwiches personally, but some mix of mayo and MW in salads, deviled eggs and the like. Dips are almost always mayo.

    But even that is preference, not an objective state of being. No food preferences are ever objective.



  • How do you know “anyone” isn’t?

    It’s not like law enforcement gets all hyped up to talk about doing an investigation. To the contrary.

    Secondary to that, what jurisdiction was it reported to? I assume someone made a report. But if nobody did, then there’s a good possibility than no enforcement agency is aware of the purported crimes.

    I had to look the fucker up, but it’s not like he was on a national broadcast like used to exist. He was streaming when questionable materials were visible on screen. Everything else is dubious, and not likely to amount to shit in court, so not many prosecutors will touch it. Seriously, the only documented evidence is of stuff that is very low use in building a case.

    So, if it got reported, and if someone investigated already, there’s a chance they didn’t find anything worth prosecuting. If the investigation is ongoing, they might not find anything at all. If the idiot did what he said and got rid of files what would be illegal on discovering they were, indeed, illegal, where’s the motivation to prosecute? It would be a drain of resources for little to no benefit to the population at large. Not that such prosecutions never happen, but if the case is weak to begin with, most DA offices don’t want to fuck with their stats.

    Seriously, if the cursory search I ran gave enough of the facts, dude doesn’t need to be arrested, or charged, or put on trial. Plenty of morons don’t realize that anime/manga can fall under kiddie porn laws (and they don’t everywhere).

    Like it or not, it’s a pointless thing to go after the guy based on what was documented




  • I have a rather intimate relationship with death. I did a lot of end of life care, so facing mortality happened early in my life, before I was even old enough to vote.

    I don’t fear death because it isn’t scary. Dying can be scary, as in all the bullshit that takes you from healthy and alive to not. If it’s sudden and fast, you won’t know it’s there. If it’s slow, well, death becomes a visitor you long to see.

    No matter what you do, you will die. That can bring peace. Accept the fact of it. Know that, some day, everything comes to its natural end. It’s certain, reliable, the one true constant we can count on. No matter what else the universe throws at our tailless monkey asses, death awaits with its open arms to embrace us all. I call that comfort.


  • Well, if you want to know what it’s like, grate some cheese, store it in a plastic bag. Then carry it with you in a small cooler all day, making sure to pull it out for maybe five to ten minutes two or three times. That gets close to what the shipping process is like. It isn’t usually a matter of just rubbing it between your hands. You’ll have clumps that are so tightly bound that it defeats the purpose of pre shredded.

    Not that there’s anything wrong with preferring freshly shredded at all. But you gotta have realistic expectations. Cellulose and starches don’t hurt anything. They’re essentially flavorless, and don’t cause any harm. They only drawback to them is when you try to melt cheese, and if you’re doing that, why pay the extra per unit price for pre shredded to begin with?





  • Well, if you mean normal as a synonym for typical or common, then a couple of times a week is where most adult, premenopausal women sit. Or, those that were willing to take part in surveys, which could skew things.

    If you mean normal as a synonym for healthy, then normal is whatever frequency meets your sexual needs without interfering with the rest of your life.

    Women tend to masturbate more as an enhancement of their sex life, supposedly (I didn’t do the studies, so I can only say so much). Which means that you might masturbate more often when having a satisfying sex life with partners. Men tend to have an upper limit to ejaculation frequency that tops out with a couple of times a day for most men before they can’t get an erection; the body just says nope and takes a rest. Three, maybe four ejaculations is where the average guy can crank some out, and most can’t sustain that every day.

    Mind you, men can orgasm without ejaculation! But it ain’t easy to learn.

    Women tend to be limited more by sensitivity and friction. The tissues of vulvae, vaginas, and clitorises gets abraded at some point, and with the elevated sensitivity brought on by orgasm, the typical woman is going to hit a similar limit as men in terms of sessions, but a higher number of orgasms may be involved per session. But! Those tissues recover quickly, so women are usually able to sustain their preferred frequency no matter how many a day it is, as the next day will have things back to typical conditions (again, on average).

    So, if you’re an every day kinda gal, don’t worry. You’re within known boundaries of frequency. As long as it isn’t messing with the rest of your life, have fun and let the other people think what they will.
