Point-to-multipoint wifi is one option to achieve this, but without knowing more about the infrastructure, it’s impossible to advise if it’s suitable. You will need power at each “node” - so barns and outbuildings are great candidates for this (as are any private lampposts etc).
As someone who has XGS-PON (8Gbps symmetrical) - even I would argue that there’s almost no consumer use for multi-gig internet.
I run a Data Engineering consultancy from the office in my garden and as such transfer literal terabytes of data each week and host a number of development / backup / testing environments & services for my clients - so latency and bandwidth are key factors.
If I was just a run-of-the-mill nerd, I’d almost certainly stick with gigabit fibre.
Our house has got multiple fridge freezers, an induction hob, several sets of Tvs.& gaming consoles, a semi-dedicated home theatre and office, as well as a 3kw hot tub - the power bill for my homelab is a rounding error amongst all that.
The only silver lining here is that they left you enough Slack to pretty much put your network rack anywhere on the property 🤣
We get almost no lightning in the UK compared to the US - it’s very rarely a serious consideration for things like ptp antennas.
