I was translating raw veggys and I was wondering if salsify roots are Scorzonera hispanica or Tragopogon porrifolius.

Both. The first is called black or Spanish salsify, the second is regular salsify.
In my language (German) they have completely different names. Scorzonera hispanica (black salsify) is called Garten- (garden), Spanische (spanish) or Echte (real) Schwarzwurzel (black root), while Tragopogon porrifolius (purple salsify) is called Haferwurzel (oat root) or Purpur-Bocksbart (purple goatsbeard).
