I have another account I’m looking to fully delete everything on it (I really wish Reddit had a one-click delete all data button…) I remember people mentioning you should edit a post/comment before deletion a while back. But since Reddit closed their API, does it matter anymore? If it is, is there an extension or program that will edit them before deletion? I know of some that will delete but not edit.

Does it matter with search engines? A newly deleted post will still appear in search results with some text from the body of the post and will continue to do so until the search engine recrawls the webpage, and this is the same regardless if you edit text or not prior to deletion.
