With adapters?
The official one. Do others work with Switch? I imagine that if it works for Smash, it’ll work for Mario Kart.

Yes, there is a USB adapter that was bundled with Smash Brothers on the Wii U, and it’s still compatible with the Switch and still sold for those that want to play Smash Brothers on the Switch with Gamecube controllers. And Stoy in this thread also mentioned a third party one which seems to allow Gamecube controllers to both register as Gamecube controllers and Switch Pro controllers for games that don’t natively support the Gamecube controller.

If so, I can confirm that the 8bitdo wireless Gamecube controller adapter works fine with it
Yes, I’m talking about Mario Kart 8 Deluxe. I don’t think there are any other Mario Kart titles on the Switch. I should’ve written “Mario Kart on Switch”, since right now it looks like a title. I will try to fix it.
