I bought 18 inch rims and the spokes are touching the brake calipers. I want to buy 3mm spacers but I still want my wheels to be hub centric.

3mm is probably too thin to stay hub centric unless you are already using a hub ring. In that case you will probably have to get a set custom made to your specs.
