Works well because they are waterproof (enough) and I can stick them on any tree or post that I can get an ethernet cable to. And I run cables just straight on the ground if it doesn’t cross any paths I care about.

Do you need WiFi 6 or do you just want it because it’s the latest? If you want to cover a lot of area, going with 2.4 GHz may be your best bet as the attenuation will be less severe at distance.
Install a few of the U6 Mesh but all connected via ethernet or fiber (depending on the length of the connection).
2.4 GHz is better suited for outdoors.
